We grow, vinify, craft and age our sparkling wines on the Recaredo family estate in the historic centre of Sant Sadurn\u00ed d\u2019Anoia \u2014 an approach that reflects our commitment to preserving the integrity of grape origin and ensuring maximum transparency throughout every stage of winemaking. <\/p>\n\n\n\n

We make only vintage Brut Nature wines<\/h2>\n\n\n\n

We remain true to a way of understanding sparkling wine that centres on the authentic expression of the grape and the landscape it comes from. That\u2019s why we make only Brut Nature<\/strong> wines \u2014 with no added sugar at disgorgement \u2014 in order to preserve the purity and natural balance of each vintage. <\/p>\n\n\n\n

We produce exclusively vintage wines<\/strong>, never blending grapes from different harvests. This approach allows us to express the unique character of each vintage and the subtle dialogue between the vineyard, the climate, and the patience of time. At Recaredo, each bottle is an honest reflection of a year, a place, and a way of working. <\/p>\n<\/div>\n<\/div>\n\n\n\n

Fermentation with indigenous yeasts<\/h2>\n\n\n\n

An authentic expression of the landscape<\/em><\/p>\n\n\n\n

We craft sparkling wines using elements sourced exclusively from our own vineyards. Over twenty years of research and patient work have enabled us to isolate naturally occurring yeasts from our vineyards, which we use for both primary and secondary fermentation of all the Corpinnat sparkling wines we make. <\/p>\n\n\n\n

Since 2014, all our corpinnats have undergone primary fermentation with indigenous yeasts. And since 2020, secondary fermentation \u2014 the process that gives sparkling wine its bubbles \u2014 has also been carried out using our own yeasts. <\/p>\n\n\n\n

This pioneering approach allows us to deepen our vision of terroir wines \u2014 wines that remain true to the most authentic expression of the Pened\u00e8s and are crafted with the utmost respect for their origin.<\/p>\n<\/div>\n\n\n\n

Secondary fermentation with must<\/h2>\n\n\n\n

One more step towards crafting wines that truly reflect their terroir<\/em><\/em><\/p>\n\n\n\n

Since the 2017 vintage, we have initiated the secondary fermentation in bottle using organic rectified concentrated grape must, replacing refined sucrose derived from organic cane sugar. The must contains a high concentration of natural sugars from the grapes themselves, which makes it well-suited for tirage, subsequent secondary fermentation, and long ageing. <\/p>\n\n\n\n

For certain Corpinnat wines, we initiate secondary fermentation using grape must from the same vineyard as the base wine, completing the circle.<\/p>\n\n\n\n

Using our own must or organic rectified concentrated must allows us to craft sparkling wines exclusively from elements originating in the vineyard.<\/p>\n<\/div>\n<\/div>\n\n\n\n

Base wines of absolute purity<\/h2>\n\n\n\n

Tailored vinification to capture the essence of the landscape<\/em><\/em><\/p>\n\n\n\n

At Recaredo, we craft our base wines with meticulous care, fully aware that they are the soul of our Corpinnat sparkling wines. We seek the purest possible expression of the grape, the vineyard, and the landscape from which our wines are born. For this reason, we adapt the vinification process to the unique character of each wine, respecting its individuality and personality. <\/p>\n\n\n\n

We work with 600-litre Austrian and German oak barrels, and large-format 2,500-litre casks, always with a very light toast that preserves the wine\u2019s freshness and varietal authenticity. As a result, our base wines are not merely a preliminary step \u2014 they are a statement of commitment to identity and excellence. <\/p>\n<\/div>\n\n\n\n
